The content of fusel oil (isoamylol, isobutanol, propanol and activity-amyl alcohol) of lychee wine was determined by headspace gas chromatographic (HS-GC) method. Throught the external standard method of fusel oil, the distribution coefficicient of was obtained, which indicated that 12% ethanol standard curve was suitable for the 6-12% alcohol beverages. Results showed that when the gas liquid ration was 3:1, it can be obtained excellent precision and accuracy comparison with OIV-MA-BS-14, as shown by the reproducibilities of 4.58%, 1.03%, 1.88%, 3.32% for propanol, isobutanol, isoamylol and activity-amyl alcohol, respectively, and recoveries that ranged from 96.74% to 103.2% for fusel oil. Moreover, the addition of sodium chloride can enhance the distribution coefficient of fusel oil and supersaturated was up to 0.3g/mL.
