A novel concept of emulsification is presented through a controlled first order transition in combination with the dynamical interfacial transport and microfluidics. The evaporation of emulsion drops inside an ambient fluid with surfactants triggers nucleation and growth of solute particles in a shell near the interface between two immiscible fluids. Solute particles transport through the interface after growth. The uniformity of the produced particles crucially depends on the uniformity of the emulsion drops.
